IDEAS Easy Luncheon RECIPES Stacked Cobb SALAD Stacked salads are a unique way to serve a salad for luncheons, special gatherings, and holidays. Perfect individual salads. Ingredients are an estimate for each salad. Ingredients • 1 C romaine lettuce, chopped • 1 slice crispy bacon, chopped • 1 boiled egg, chopped • ¼ C cherry tomatoes, diced • 1 green onion, chopped • 1/2 avocado, peeled and diced • ¼ C feta cheese, crumbled • 1 T sliced almonds, toasted • ½ C rotisserie chicken, diced • 2 T creamy dressing - Green Goddess, Ranch, or your favorite dressing Instructions • Prep all ingredients and add lettuce, bacon, eggs, tomatoes, onions, avocado, and chicken to separate bowls. • Toast sliced almonds in 375° oven for five minutes. Set aside. • Cut the bottom off a clear solo cup, leaving about a 4” cylinder. • Turn the cup with top down onto the plate that salad will be served. • Mix lettuce with 2 T dressing. • Place ingredients in the order you choose, pressing down each addition. • Suggested order: lettuce, chicken, bacon, avocado, tomatoes, green onions, feta, and top with almonds. • Remove cup by lifting straight up. • Serve with additional dressing. • These are best made right before serving. You may leave cup in place and cover top of cup and leave refrigerated until serving time. An impressive individual salad that will delight guests! Perfect for luncheon or poolside.
