SUPPORT BUSINESSES THAT MAKE OUR MISSION POSSIBLE Corn Salad With lots of fresh corn available, this recipe provides an easy, new way to enjoy fresh corn, tomatoes, and basil. Start to finish: 20 minutes Servings: 6 cups Ingredients • Fresh corn- 5 ears, husks removed • ½ C red onion, diced • 1 C cherry tomatoes, cut in quarters • 3 T olive oil • 3 T rice wine vinegar or your favorite vinegar • ½ C fresh basil leaves - chiffonade (roll basil • and slice thinly) • ½ t ground pepper • ½ t salt Directions 1. Remove husks from fresh corn and place in a large pot of boiling, salted water. Cook for 3-4 minutes and then immerse into ice water to stop the cooking. 2. When cool, drain and cut the corn off close to cob and add to a mixing bowl. 3. While the corn is cooling, dice the red onion, cut cherry tomatoes in quarters, and add to the corn. 4. Whisk together the olive oil, vinegar, salt and pepper. Pour over corn mixture. 5. Mix and add the fresh basil just before serving. This recipe is a favorite and easy way to serve corn.
