Spray with a baking spray or drizzle with olive oil. • Add the cubed sweet potatoes onto the baking sheets, drizzle with olive oil, and sprinkle with salt and pepper. • Roast in the preheated oven about 25-30 minutes until they are browned and tender. • Remove them from the oven and set them aside to cool. Pecan Instructions • Add butter, salt, cinnamon, brown sugar, and maple syrup to a nonstick skillet and combine over medium heat. • Stir in pecans to coat and stir for about 5-6 minutes until they are coated and glazed. • Remove from heat and spread out in an even layer onto parchment paper to cool. • When cooled, cut into pieces, separating the glaze, as well. Vinaigrette Instructions • In a small bowl, whisk minced garlic, vinegar, orange juice, orange zest, mustard, maple syrup, brown sugar, black pepper, and salt. • While whisking, drizzle in the olive oil to form a vinaigrette. • Chill vinaigrette separately until ready to serve salad. Salad Instructions • When ready to serve, mix in a large serving bowl roasted sweet potatoes, dried cranberries, red onion, celery, and Feta cheese. • You can serve warm or cold. • If serving later, store in an airtight container in the fridge. • NOTE: to keep the salad bright and fresh if making the day before serving, keep the ingredients in separate containers and mix before serving. • Right before serving, mix ingredients and most of the vinaigrette. Toss to coat. • Add the rest of the dressing to taste as needed when serving. • If adding in fresh herbs, add right before serving.
