A TRADITION PRESERVED WITH THE RETURN OF AUTUMN comes the return of many seasonal favorites – pumpkin patches, apple picking, fall festivals, hayrides and a favorite to many in our area – canning. While canning can be done year-round, there is something about the fall months that makes it feel extra cozy. For Crystal Troutt, owner of Troutt Old Time General Store, canning is more than just a seasonal pastime – she’s become quite the aficionado. Troutt raises all NON-GMO heirloom produce and herbs, and has for over 28 years. “I also dry our herbs to use in our jarred goods and mixes. We grow everything from tomatoes (our favorite), peppers, onions, squash, zucchini, okra, melons, and more,” said Troutt. “If we do not grow things or something happens to our crop, then we will use produce that is also locally grown!” Some people learn canning from elders before them, often a tradition passed down. Troutt, however, is self taught, and with a lot of trial and error, she now makes some of the best canned goods around. In a typical season, Troutt processes between 950–1,050 jars per season. “I do can in the winter using the produce that I am able to freeze,” said Troutt. “This is my favorite time to can as it is so much cooler than in the summer.” Troutt believes that people are becoming more and more interested in the process of canning, stating that it’s having quite the comeback in the past few years. “More and more people want the ability to know exactly what they are consuming for sure,” said Troutt. “There is also a lot of interest in the old-fashioned ways, even with the younger generations, which I personally love.” She thinks the old-fashioned things hold an appeal for folks, because they represent a slower, simpler time. Because our world is so instant and fast-paced, it is nice to slow down and ‘smell the roses’ – or should we say, the canned goods. Especially, Crystal’s Apple Cinnamon Pepper Jam. While people who begin canning may think it’s simple, easy and quick, Troutt can attest that it is certainly not. Taking the time and having patience are worth it, and she reminds people that everyone is absolutely capable. Apple Cider Jelly - this might be because it is my favorite thing to eat as well!
